Pineapple Ice Box Cake

 
 

this lucisous cake tastes marvelous

 

Taste and health benefits of Butter, Shortening (Crisco/Spry), and Lard are still hotly debated. Aunt Pit wasn't afraid of any of them.

2 cups sifted cake flour
1 1/4 cup sugar
3 1/2 teaspoons B.P. [baking powder]
1 teaspoon salt
1/2 cup spry [shortening]
1 teaspoon grated lemon rind
7/8 cup canned pineapple juice
1 teaspoon Vanilla
3 egg whites unbeaten

sift flour, B.P. & salt in mixing bowl
drop in spry, lemon rind,
add pineapple juice & vanilla
beat 200 strokes 2 min by hand or mixer at low speed
add egg whites
beat 200 strokes or 2 min. by hand or mixer

bake in 2 square 8 x 8 inch spry coated pans in moderate oven 360°25 to 30 min

chill layers and split in half
spread pineapple filling and whipped cram between layers
cover top [with] whipped cream
store in refrigerator several hours before serving
serve in slices.

grated rind of lemon
3 egg yolks
butter
1/2 cup p a juice
